Ingredients

For the ganache

200ml double cream

200g Bournville Dark Chocolate chopped

For the base

300g Oreos

200g Hershey’s Chocolate Dipped Pretzels

50g unsalted butter melted plus extra for greasing

For the filling

1 tin Carnation Caramel

4 ripe bananas

600ml double cream

1/2 tsp vanilla

Decoration

Bourneville Dark Chocolate

Oreos

Hershey’s Chocolate Dipped Pretzels

Hot chocolate powder - optional

Method

For the ganache

  1. Gently heat 200ml of double cream in a saucepan until bubbles break the surface.
  2. Remove from the heat and add in the chopped Bournville chocolate.
  3. Step away and leave for 3-4 minutes then mix until smooth and glossy. Allow to cool.

For the base

  1. In a blender, add the Oreos and Hershey’s pretzels and blitz into a very rough crumb (or place in a bowl and use the end of rolling pin to bash up).
  2. Add the melted butter and mix through.
  3. Using a pastry brush, brush a fluted loose bottom tin with melted butter.
  4. Press the Oreo and pretzel mix into the greased tin using the back of spoon to smooth it out.
  5. Place in the fridge to chill.
  6. Once the base is chilled, tip the ganache onto the Oreo base and smooth out.
  7. Return to the fridge to set fully.

For the filling

  1. In a bowl, tip out the Carnation Caramel and mix until smooth.
  2. Slice the bananas into half inch pieces.
  3. Add 600ml of double cream and the vanilla into a large bowl and, using a hand whisk, whip until soft peaks.

Bringing it all together

  1. Remove the base from the fridge and evenly spread the caramel over the ganache.
  2. Then top with the banana slices and finally the vanilla cream. You can either dump it on in soft peaks, smooth it out or add to a piping back fitted with a star nozzle and pipe the cream on.
  3. Then decorate with whole and broken Oreos and pretzels on top.
  4. As an optional extra, you can melt any extra dark chocolate and add to a piping bag and drizzle lines across one side of the cream. If not, you can dust with hot chocolate powder.
